Two weeks ago, at our fajita family dinner, we decided to continue with our ‘themed’ dinners and one of my roommates found an excellent recipe for stuffed shells.
The rest was history. A huge salad, homemade bread sticks, and zucchini sticks were all served rounding out our dinner.
I don’t have the exact recipe for the shells but since I participated, I’ll give you the general run down.
Prepare one package of large shells per instructions. Drain, rinse with cold water, and drain again. Let cool.
Mix about 2 packages (16 ozs) of thawed, drained, and squeezed chopped spinach with 1 egg, 2 cups of ricotta, 1/4 cup grated Parmesan, and 8 oz cup grated mozzarella.
When shells are ready, later a baking pan with tomato sauce. Gently spoon about 1 T (or a generous portion) of filling into shells and place in baking dish. When all shells are filled or filling is gone, layer an additional layer of sauce over.
Cover with foil and bake at 375 degrees for 40 minutes. Bake for 5 additional minutes uncovered.
