Satisfying Salads

On Mondays, I double duty my workouts.

I run for at least 30 minutes and then go to a yoga class around lunchtime. What’s the significance of this you ask? It means at 1:00 I am starving. But I want something light and healthy yet satisfying. I think it’s the essence of yoga that does this to me.

So having just bought lettuce at the grocery store, I prepared a hefty salad for my consumption. Topped with radishes, raisins, pears, and roasted squash seeds, it was definitely a fall harvest salad. Yes, a little bit of a weird combination but trust me, it works.

But don’t worry, I had a little grilled cheese on the side.

But back to the salad.

I enjoy mixing up my toppings and adding a variety. It’s so easy to make a tasty combo that makes me feel good, both on the health and taste side. I just need to do it more often.  The squash seeds and pear made my salad extra delicious and worked really well together.
