Crazy for Kale

I can’t remember how I got hooked on kale.

A couple years ago, I must have been recipe surfing (which is a dangerous addiction for me) and stumbled across a few recipes using it. Being the foodie that I am, I thought I should try it.

And it was delicious.

So now, my go-to with kale is to toss it in olive oil and salt and saute it in a pan. It’s delicious  and kale is relatively cheap so I have no guilt in buying it.

I’ve made kale chips before too but sauteing it is my absolute favorite method.

I will put it on anything.

Last week, I bought some at the store and have been using it several times a week since. It’s been my go-to side dish, an extra kick on my grilled cheeses and a tasty green in this squash-meatball-pasta I made the other night.

I should stop. This is making me hungry.

Kale is super-healthy for you and has a unique taste. It doesn’t wilt like spinach so a little goes a long way.

I know that for dinner tonight, I’m going to finish up the little bit of kale that’s left in my fridge, what about you?
