I love rainy days.
I even like walking in the rain if I’m properly attired.
Yeah, I know. This is the exception not the rule but there’s just something very cozy and calming about the rain. That’s why I like it.
However, I do not enjoy walking around in rain that is blowing every which way. It’s not a very enjoyable experience.
But soup is.
I never used to think of soup as a go-to meal, but I’ve recently discovered all of the amazing things you can do with it. There are so many different ingredients you can put in it, that it’s a no-fail meal.
I made this soup with black beans and pork, and through in some random ingredients like tomato sauce and carrots.
But it worked really well together and the smokiness of the pork and black beans mixed well with the sweetness of the tomatoes.
And the perfect meal for a rainy day.
Pork and Black Bean Soup
1 clove garlic
1 can chicken broth
1 can black beans
1 pork chop (you can add more if you want to make this really meaty, also I was using leftover pork but you can prepare as desired, it’ll be good any way!)
1/4 cup chopped carrots
1/4 tomato sauce.
1 tsp oregano
Mince garlic and place in pot as it heats up. Add chicken broth and cook over medium to med-high heat.
Divide black beans in half. Puree half in blender or food processor until almost smooth. Pour puree and whole beans into pot.
Add in pork (cut into pieces) and carrots. Let simmer for about 10 minutes.
Stir in tomato sauce and cook for an additional 10-15 minutes or until carrots are at desired tenderness.
Sprinkle with oregano and serve.
