Snacks on the go!

Today, I’m headed home for a little visit!

I have a interview in the area and am so excited to spend some time at home as well to just relax.

But I have a long car ride ahead of me first. So I’m prepared with lots of snacks and music.

Yesterday I roasted some chickpeas with salt and garlic. Yum! And it was hard not to eat them all right then. If you haven’t already made them, they’re like crack  super addictive, so I suggest you roast several cans. Just rinse them, toss in olive oil and desired seasonings and bake at 450 degrees until crisp and crunchy.

I’m also taking some apples, carrots, and a veggies sub. It’s hard to be healthy on the road so I’m packing these goodies and will maybe pick up something sweet on the way. 🙂

Anddd I”m going to jam to some Adele (don’t you love her?), Beyonce and some of my other older cds. Oldie but goodie right?  I love to listen to the radio but get frustrated if I constantly have to change the station.

Hopefully, my car ride will go fast with all the fun stuff (ha!) I’m bringing along.

And I’ll have lots of coffee and diet coke (addictions!)

Any other ideas for good road trip snacks?
