Happy Wednesday! Working my way through the week.
So on Monday, I shared a little about my trip to Trader Joe’s last weekend. I got so many good eats that I’m trying not to open everything and devour them all at once.
But I did open my pumpkin seeds as a snack on Sunday. Boy, was that a bad idea. There were salty and just snappy enough to be addictive.
They then made an appearance in my salad on Monday, and my overnight oats yesterday.
Vanilla yogurt, cinnamon, milk, oats, a dash of cinnamon and a handful of oats made a perfect breakfast.
Today, I’ll probably munch on them as a snack or add them to some other healthy dish.
Pumpkin seeds are supposed to be pretty good for you so I don’t mind indulging in a couple handfuls throughout the day.
