Squashy Week and Race Prep

Somehow 3 out of 4 of the dinners I’ve had since Monday have included squash. This wasn’t even on purpose. Total ingredient accident.

I guess I just love it so much I didn’t even notice

Monday: Couscous with eggplant, and butternut squash. Eggplant and Squash courtesy of Trader Joe’s

Wednesday: Tomato, mushroom, and squash pasta (Starting to carb load)

Thursday: Frozen leftovers: Turkey meatballs and this pasta bake I made early this fall. yum

I still have more than half of my bag of squash from Trader Joe’s left but am totally okay with that. Next week will just have to be squashy too. 🙂

Last night I started gathering stuff up for my 15k tomorrow!

I’m getting really excited and later, we’re making the journey to my aunt’s house. Saturday will be an early morning but hopefully worth it. I can’t wait to run and then eat lots of chocolate. Let’s hope my stomach can handle it!
