My lunches lately have consisted of salads with very goods pile on top or pita pockets filled with turkey meatballs, cheese, or tons of veggies too.
Of course I have a side (or two or three) like carrots and hummus, pita or lentil chips,some fruit or a baked good but these simple lunches are really some of my favorite meals.
I love breakfast, but sometimes lunch is the perfect time to have a bit of everything. It’s casual enough that your meal doesn’t have to be fancy, but it can be if it once.
That’s why I love salads and sandwiches, you can customize that baby and make it pretty fast so if you’re a hungry gal like meal, lunch is ready in no time.
Today, my plan is to recreate this salad from Sunday.
Roasted butternut squash with apples, pumpkin seeds, and maybe some other findings on a bed of greens with a piece of toast and a bowl of soup on the side. Yum!
