Family Dinner: Chili and Cornbread

In February, you think that chili would be a perfect meal for a mid-week day, you know because it’s supposed to be cold and all.

Last Wednesday was in the 60’s and quite warm. Don’t get me wrong, it was a beautiful day but I was kinda craving the bitter cold to go with our family dinner of chili. But only for that one day thank you very much. However, our chili was delicious even though it didn’t go with the weather.

We made it in the crockpot so really all we did was open cans of beans, corn, tomatoes, and green chilis, chop up a pepper and an onion and throw in a can of seasoning mix.

The cornbread was baked right before dinner and served as the perfect accompaniment.

Even though most of my meals are home-cooked creations, there’s something about these feasts that are so appetizing

So today I’m looking forward to our family dinner of fajitas tonight as the end to a really crazy day so stayed tuned for that adventure.

And then I’m half way through the week! 🙂

A Super Smoothie

I am a huge fan of grapefruits. I haven’t always been this way. In fact it was only about a 1 1/2 years ago that I tried one again and loved it.

So I eat lots of grapefruits, especially when I’m not a school, and I have enough storage for them. They make a breakfast more complete and even work as a really good snack or ‘dessert’ after lunch or dinner.

Another thing I love but don’t have nearly enough of: Smoothies.

I can’t have a smoothie for a meal because it doesn’t fill me up enough but sometimes it’s too much of a snack or I forget about it.

But the other day I didn’t.

I mixed a honey Greek yogurt, flax, spinach, milk and half a grapefruit and its juice together into a delicious smoothie.

It was refreshing, light and tasty, and upped my mood tenfold. Who would have thought of grapefruit in a smoothie? It was worth the risk and absolutely amazing.

Honey Grapefruit Smoothie

1/2 half of a grapefruit (you could also peel it and have more of the pith so its more nutritious but I just spooned out the segments)

1 Greek yogurt ( I used honey but peach or another citrus flavor would also work)

A handful of spinach

1 T flax

Splash of milk

1 tsp of honey

Combine all ingredients and blend until desired consistency.


Ice Cream and the Oscars

I enjoy watching the Oscars but I enjoy the red carpet even more.

Seeing all the stars glammed up in gorgeous gowns and making comments on them is one of my favorite things to do.

When you’re camped out in front of the t.v. you need some good food. I have no idea why but Chinese takeout seems to be the perfect dinner for watching the Oscars red carpet in my yoga pants and sweatshirt under a blanket on the couch. Yes, I’m super glamourous.

So I had my chicken and broccoli and rice and ended up with a sweat treat for dessert. Black Cherry ice cream topped with Easter Bunny m&m’s. A delicious way to start off the actual Oscars ceremony.

If I had some more motivation, I could have made desserts themed for the Academy Awards but I’m pretty sure nothing could have topped this ice cream combo.
