In February, you think that chili would be a perfect meal for a mid-week day, you know because it’s supposed to be cold and all.
Last Wednesday was in the 60’s and quite warm. Don’t get me wrong, it was a beautiful day but I was kinda craving the bitter cold to go with our family dinner of chili. But only for that one day thank you very much. However, our chili was delicious even though it didn’t go with the weather.
We made it in the crockpot so really all we did was open cans of beans, corn, tomatoes, and green chilis, chop up a pepper and an onion and throw in a can of seasoning mix.
The cornbread was baked right before dinner and served as the perfect accompaniment.
Even though most of my meals are home-cooked creations, there’s something about these feasts that are so appetizing
So today I’m looking forward to our family dinner of fajitas tonight as the end to a really crazy day so stayed tuned for that adventure.
And then I’m half way through the week! 🙂
