Fuel for Fitness

I have a tough schedule this semester but managed to fit in a 1 credit exercise class. It’s called Lower Body Blast, and I had my first class today. It’s an intense mix of weight training and cardio, and I’m looking forward to the burn it’s going to bring for the next 3 months.

In order to be ready for class, I wanted a light but filling lunch. So I made up a salad topped with tomatoes, carrots, and pumpkin seeds, and finished my meal with almond butter toast and an apple. I’m feeling really good with the balance of the meal and how much it satisfied my hunger.

My favorite part was the toast. It was a little sweet with the additional of sugar chocolate coffee grinds so a delicious way to finish a meal.

Hopefully, I can keep up the fueling lunches and the workouts!
