Rice and Salad

Of course I’m still eating salad even though it’s freezing outside. Sometimes I wish I wasn’t, but a girl’s got to get her greens somehow ya know?

Well, actually I don’t mind eating a nice salad despite the cold weather but I have to pair it with something warm whether it be a piece of toast, a mug of tea/coffee, or reheated leftover rice that sits on top.

Rice is one of my favorite ways to dress up my salad. I think it adds a twist and gives it a little more something something than just veggies.

So my salad was a combo of leftover snap peas, rice, tomatoes, and spinach. It was delicious and when paired with carrots, hummus and lentil chips on the side, who can complain.

And it’s Wednesday, so we’re halfway there- even less reason to complain.
