Chickpea Bowls

The other night I wasn’t sure what exactly I wanted for dinner.

Something simple but delicious. Warm but not heavy. And then inspiration and randomness struck.

Why not do chickpeas and broccoli together?

Then I wanted to tie them together somehow. I’m actually not a huge tomato sauce person, I’d rather have a lighter sauce like olive oil but the jar I had just bought seemed to call to me. And it was a delicious decision.

The flavors went really well together and filled me up. Plus I could eat a huge bowl of it because it was super healthy.

I just heated the chickpeas up in a pan with some garlic and cooked up the broccoli on the stove and mixed them together. Voila!

So sometimes randomness isn’t all that bad huh?
