Living in a dorm apartment in college can be crazy. Crazy in a good way (because I love my roommates).
But when you’re running around with classes and homework and various activities can mean dinner takes a back seat. I always try and make something balanced and healthy but it doesn’t always end up very varied.
Also when 4 of you are trying to make dinner on a tiny stove, it doesn’t always work out very well.
However there is always a solution for this. Most of the time, we just wait until someone is done or are respectful of space. But our best solution is something new- Family Dinners! We’re doing just once a week but last Wednesday made a Margherita pizza and salad. It was the perfect dinner: delicious and filled with chit chat that just helped us all to relax.
It was simply olive oil spread on a crust and sprinkled with basil, oregano and garlic, and topped with mozzarella, tomatoes and a guest appearance of some onions.
Tonight’s dinner is chili and better yet, we’re cooking it in the crock pot. No pictures yet but we’re filling it with beans, peppers, onions, and corn and serving delicious cornbread on the side.
