Mexican is probably one of my favorite categories of food*. Scratch that- authentic Mexican.
*Excluding all the healthy smealthy stuff I weirdly love.
There’s so much you can do with it, but unfortunately, where I live a truly delicious Mexican restaurant is a hard find. At school, it’s a little better but a solution for every day is make at home. Maybe I’m just not looking in the right places but if I can fix it at home, then why go out. If I can’t get authentic homemade fluffy toritillas at a restaurant, home wins for a Mexican feast. Because sometimes, home>restaurant (sometimes).
So last Wednesday, we cooked up a little dinner of fajitas and rice. Our fajitas were loaded with peppers of an array of colors and spiced up with onions and HOT salsa.
It was a delicious dinner that left us satisfied but still with room for a little treat.

So for a nice little meal, cut up some chicken, cook until no longer pink. Add in your peppers and onions and when chicken is cooked and veggies are softened, add in your seasonings per instructions.
Warm up your tortillas and serve alongside rice or black beans or whatever you please!
