I may be a little Nutty

but you’ve got to try these granola squares! (an explanation in just a moment 🙂 )

first: um how is already Thursday?

This week really flew by (which is fine by me!) but sometimes I don’t even no where the time goes.

And today is a busy jammed packed day so I thought maybe I’d share a snack jammed packed with yummy things.

Granola Squares!

It all began with a discussion about how expensive granola bars are. Half jokingly I told my roommate that she could just make her own. We laughed because it’s totally something I would do and she unknowingly presented me with a challenged… “I would eat them if I couldn’t tell the difference [meaning between store and homemade]” I then spent the next couple days researching recipes and finally had some time to cook up a batch.

Result: My recipe is good, my technique needs a little work. They were a little crumbly so are more like granola than a bar but I think they went over pretty well.

Plus, they were sooooo easy to make. I think the hardest part was chopping up some nuts.

I adapted this recipe and used Emerald’s Sweet and Salty dark chocolate peanut butter nut mix along with some plain almonds. I also used steel cut oats and almond meal in addition to rolled oats. And use cinnamon! Trust me, it’s like the key to making it so delicious!

Make them! And then spend the rest of the day smelling like cinnamon and oats and all this comforting or do something energetic now that you have this fuel!

 

Flowers + a Springy Lunch

These were taken Sunday.

We took a little field trip to a local garden, and although the weather wasn’t super sunny, it was a beautiful day and a relaxing trip.

Apparently I like taking pictures of flowers up close and fountains. Oops!

I must have still been in the springy mood because this salad (if you can call it that, I am) was my lunch Monday.

Zucchini, red onion, and tomato. It was incredibly satisfying and paired well with my yogurt and hunk of bread (embarrassingly huge). It was literally a spur of the moment concoction but I’ll definitely be making it again.

Lazy Bones

I just haven’t been doing a good job of keeping this updated have I?

I could give you a million excuses but the truth is, I’ve just been lazy.

So with the last push of school (about 1 week of classes plus finals left), I need to use some of that motivation here.

For starters, a couple breakfast options:

Coconut Oat Groats

Simply oat groats cooked in coconut milk. Delicious, especially when topped with some coconut flakes.

 

Blueberry Pancakes

Nothing fancy here, just pancake mix + blueberries + a little lemon zest to give a little zip

But it’s no secret that breakfast is one of my favorite meals, and these options gave it a little spring in its step. Plus they’re easy and simple!

As for me, I’m going to try and be a little more diligent here (so she says 🙂 ). I have some creations (both previously made and forming in my head) that hopefully I will share soon!
