Hey guys, Happy Wednesday!
I have an overabundance of random foods that I need to eat/finish up so cooking anything creative hasn’t been a huge option for me lately. I had leftover birthday treats, leftovers from another function I went to, and takeout from a birthday pizza celebration.
Plus with a couple of things to attend this week where there will be food, I don’t have to cook much. Which is great (and the food will be yummy!) but leaves little for me to tempt you with.
However, some of those above leftovers were wraps. A chicken ceasar wrap (but without all of the heavy dressings) and a sauteed onion/pepper and beef wrap. Which made me crave wraps for lunch. I’m not usually a wrap girl but these things come and go, right?
Yesterday, I slathered hummus on a wrap, added zucchini and squash, spinach, and some eggplant cutlets (from Trader Joe’s) and enjoyed a very satisfying and healthy lunch.
It was simple, quick, and delicious. A perfect craving satisfier.
