I just haven’t been doing a good job of keeping this updated have I?
I could give you a million excuses but the truth is, I’ve just been lazy.
So with the last push of school (about 1 week of classes plus finals left), I need to use some of that motivation here.
For starters, a couple breakfast options:
Coconut Oat Groats
Simply oat groats cooked in coconut milk. Delicious, especially when topped with some coconut flakes.
Nothing fancy here, just pancake mix + blueberries + a little lemon zest to give a little zip
But it’s no secret that breakfast is one of my favorite meals, and these options gave it a little spring in its step. Plus they’re easy and simple!
As for me, I’m going to try and be a little more diligent here (so she says 🙂 ). I have some creations (both previously made and forming in my head) that hopefully I will share soon!
