first: um how is already Thursday?
This week really flew by (which is fine by me!) but sometimes I don’t even no where the time goes.
And today is a busy jammed packed day so I thought maybe I’d share a snack jammed packed with yummy things.
It all began with a discussion about how expensive granola bars are. Half jokingly I told my roommate that she could just make her own. We laughed because it’s totally something I would do and she unknowingly presented me with a challenged… “I would eat them if I couldn’t tell the difference [meaning between store and homemade]” I then spent the next couple days researching recipes and finally had some time to cook up a batch.
Result: My recipe is good, my technique needs a little work. They were a little crumbly so are more like granola than a bar but I think they went over pretty well.
Plus, they were sooooo easy to make. I think the hardest part was chopping up some nuts.
I adapted this recipe and used Emerald’s Sweet and Salty dark chocolate peanut butter nut mix along with some plain almonds. I also used steel cut oats and almond meal in addition to rolled oats. And use cinnamon! Trust me, it’s like the key to making it so delicious!
Make them! And then spend the rest of the day smelling like cinnamon and oats and all this comforting or do something energetic now that you have this fuel!
