Halfway through another week. This week is a lot more relaxed and calmed down for me than previous weeks so it’s nice to
be lazy catch up on things.
As always, thanks to Jenn for hosting, and my eats are from Monday so enjoy!
Breakfast: Toast with almond butter and bananas. I burned my toast a little but it was still delicious
After yoga, I grabbed a pumpkin coffee at Dunkin Donuts because I had purchased a gift card from a groupon a couple of weeks ago.
Lunch: Raisins, pecans, and sunflower seed salad
A perfect fall meal. I also ate an apple and yogurt to round it out. Followed by several handfuls of chocolate chips :).
Afternoon snack/Dinner: I ended up eating dinner pretty early due to one of my classes being cancelled and my growling stomach. It started out just as a snack of a grapefruit and cheese but then a little bit later I added a baked potato and ruined my appetite for a meal before my night class.
My weird dinner snack left me hungry after class so I enjoyed a few bites of leftover buffalo chicken dip and a pumpkin + cookie ice cream sandwich. Sadly this was the last of my pumpkin ice cream so no more treats like this can be enjoyed.
I also prepared pumpkin hummus as a fall treat for my spices cooking class on Tuesday and snuck a few taste tester bites. Recipe to come!
