Can I just say that I feel like this week should be over already. My Monday and Tuesday were so busy that although they flew by, I definitely had enough going on for the week. Coupled with being awake from 2:30 to 5:30 on Monday night/Tuesday night because of my dang cold, I’m just ready to relax. But a few more days to get through.
My Monday eats for WIAW were delicious and helped me start the week off right. I must have been in a sandwich mode which is rare for me because that’s what my breakfast and dinner were.
Breakfast: Egg on Toast with Pumpkin Butter
I just love the combo of sweet and savory here. yum!
After yoga, I snacked on an orange and drank some chicken broth to help with my cold drowsy feeling.
Lunch: Grilled Cheese with Amy’s Tuscan Bean & Rice Soup, Apple, and Carrots
I love grilled cheese but try to have it in moderation. It paired so perfectly with this delicious soup.
I often feel like I have trouble balancing my lunches- nothing seems to satisfy me but this did a pretty good job!
Afternoon Snack: Before heading out for my afternoon class and some other things, I snacked on one of these quinoa cups inspired by Iowa Girl Eats BLT quinoa cups.
Mine have kale and turkey pepperoni in them but are delicious none the less!
Dinner: Eaten in a flash before I had to go to class but it was Trader Joe’s Sweet Potato Gnocchi (the most amazing thing ever) with a side of yummy kale.
And my treat for getting through such a long day…
Greek yogurt with honey and fall sprinkles.
