Happy Wednesday everyone!
Every other year we have a day off of school, so I had class Monday, then a day off which is not helping me get back on a schedule after last week but it was so nice to have a break again.
Yesterday’s eats are what I’m sharing since it was a different type of day. Again, thanks to Jenn at Peas and Crayons for hosting WIAW!
Breakfast was my yummy Trader Joe’s pumpkin pancake mix but this time I transformed it into a baked pancake that I topped with almond butter.
I hadn’t had plans to study at the library yesterday, I’m usually an at home in my room kind of studier but with the tempt of leaving to get Starbucks, I joined one of my roommates to hit the books.
On the way we grabbed coffees and a Subway turkey sub to split later when we got hungry.
And it was such a good idea to get the sub because a couple hours later, our stomachs were growling.
Midafternoon, I headed back home and ate a snack of some chocolate, and an apple. I then bundled up for a run.
For dinner, I wanted to use some butternut squash that I had roasted up so made a creamy sauce for some linguini, added black beans, corn and spinach for a fall harvest pasta dish.
And then my evening crashed with some sweets (darn all those Halloween left overs!) and an ice cream cone. Not too bad to enjoy treats now and then.
