WIAW

Hey everyone- Happy Wednesday!

After another busy today, I can finally rest until after Thanksgiving. Still plenty to do but a little less demanding so I can wait until later tonight to just unwind!

Since I’m back on my normal class schedule, my eats are from Monday again! Thanks to Jenn for hosting- go check out her blog!

Breakfast was yummy banana oatmeal with some protein powder and a splash (or pinch rather) of cocoa powder. Filled me up!

That morning I snacked on a couple crackers and a couple candy corns while doing some homework.

Then lunch was a piece of cake (literally) and spinach salad- so good with chicken on top! Simple dishes really are sometimes so good and can really help balance out a meal.

An afternoon snack of coffee and an apple.

Followed by an early dinner of spaghetti squash, broccoli, pumpkin and mozzarella cheese. This was an almost repeat of Sunday night’s dinner!

And my last pumpkin apple muffin- so sad.

After my night class, I did some studying for a test and snacked on applesauce with cranberries, toast, and tea!

  2. Awww… I’d be sad too if I ran out of pumpkin apple muffins! Aside from blueberry, I think that is the greatest combination ever!

    I never would have thought to add pumpkin and spaghetti squash together! Was it pumpkin puree or cubed pumpkin?
