Three Things I’m Loving

So it’s been a couple of weeks since I’ve done one of these but I’m back!

However, this will just be short and sweet because I have a  lotttt to do between now and my final tomorrow at 8! (woohoo- can you sense my sarcasm). But then my hardest final is done with and I have a couple days before my next (and last) one.

Here we go:

1) Mugs


I’ve always been a fan of mugs as opposed to coffee cups for my coffee so when I plopped myself down at Starbucks to studying for a while, I go my coffee  ‘for here’ and was in complete bliss with my mug.

2) Finals study snacks

3) Sweet Potatoes


I’ve always been a fan but it seems like I just can’t get enough lately. While I’m definitely up for experimenting ( like this recipe), you can’t beat a quick and easy dinner of a baked sweet potato

WIAW: Plenty to Eat

Happy Wednesday everyone!

How’s your week going? Mine has seem to drag on so far but today’s my last day of class and all of the studying hasn’t been helping the week pass quickly.

Monday wasn’t quite as busy as usual but I did have an evening exam so it was nice to have a bit of extra time to study. Don’t worry, there was plenty of procrastination in there too ;).

Thanks again to Jenn for hosting WIAW! Hopefully this month I’ll share some of my favorite holiday recipes with healthy spins on them!

My breakfast was par for the course with an orange before yoga and a hot steaming bowl of oatmeal after. This oatmeal was topped with almond butter, craisins, and a bit of chocolate powder.


I also had an apple and a handful of goldfish as a mid morning snack.


Lunch was ham on hummus topped toast and my favorite beet and (laughing cow wedge) cheese salad. I just love the combo of flavors in the salad and it’s such a wonderful mix.



Mid afternoon I had a yogurt topped with granola.

Dinner was eaten pretty early before my exam and was roasted cauliflower, chicpeas and Trader Joe’s risotto left over from Sunday. Well balanced with a gingerbread man too!


Later that evening was a snack fest of a delicious ganache topped butterscotch bar, a almond butter microwaved banana and several more handfuls of goldfish. My banana was holiday-fied with some white chocolate chips sprinkled on top.

Once I started snacking, I just couldn’t stop.


Back to the books for me now…

A new favorite sweet potato recipe

When my Thanksgiving plans were finalized, I got to start brainstorming recipes.

I like to stick the traditionals but also enjoy spicing up meals for holidays. Changing things around or trying something new in order to make it healthier or incorporate different ingredients.

When stumbling around on the Barefoot Wines website in their recipe section, I happened upon a recipe for sweet potatoes and Moscato wine. It looked interesting and easy to make.


It didn’t disappoint. I was actually in love with these sweet potatoes and ate them for the rest of my time at home. I used them to top salads and even picked at them from time to time (whoops :)).


If you’re looking for a fun and easy new dish to try this holiday season, I highly recommend this. The potatoes were sweet but also kept their flavor and had enough spice to them to make them a savory side dish.

Moscato glazed sweet potatoes

(adapted from Barefoot wines)

3 Lbs diced sweet potatoes

1/2 cup honey

3 T fresh grated ginger or sub. appropriate amount ground

2 T nut oil ( I used macadamia because that’s what we had, but even olive would be fine)

1 tsp ground cinnamon

1/2 tsp ground black pepper

1/2 cup Moscato wine

Preheat oven to 450 degrees. In a large glass baking dish, toss together all ingredients, and bake for 20 minutes. Stir the potato mixture turning the pieces to ensure even cooking and continue baking another 20 minutes or until the potatoes are tender when pierced with a fork and nice and caramelized on the outside.
