WIAW: What I’ve been Baking

So you know what happens when you go home for break?

You get sucked into the vortex of laziness. Yes, I’ve been productive cleaning my room out, watching t.v., and exercising but blogging has not been happening. Maybe it’s because I’m not doing anything interesting?

This weekend was Cookie Baking Extravaganza 2012 (not a thing but I just made it one). It also turned into Cookie Eating Extravaganza 2012 so instead of a normal WIAW- it’s the cookie edition.

Thanks to Jenn for hosting! Here are my not so healthy eats treats of late.

Peanut Butter Blossoms and Molasses cookies:


My dad is a huge fan of both the blossoms and molasses cookies. I enjoy the molasses for the spicy bite and the blossoms are always a favorite.

Pineapple cookies:


For some reason, I always associate Pineapple with Christmas time. Yes, I know it’s a very summery fruit and it definitely makes me think of warmer weather but it is also reminiscent of the holidays for me. My best guess is because of these cookies or that we occasionally have pineapple on Christmas morning. But def a fav for the moist but sweet taste.

Of course we made these. And this is the best batch ever.



Maybe not a Christmas cookie but I spent yesterday learning how to make these from my Greek uncle and they’re a treat!

WIAW: Plenty to Eat

Happy Wednesday everyone!

How’s your week going? Mine has seem to drag on so far but today’s my last day of class and all of the studying hasn’t been helping the week pass quickly.

Monday wasn’t quite as busy as usual but I did have an evening exam so it was nice to have a bit of extra time to study. Don’t worry, there was plenty of procrastination in there too ;).

Thanks again to Jenn for hosting WIAW! Hopefully this month I’ll share some of my favorite holiday recipes with healthy spins on them!

My breakfast was par for the course with an orange before yoga and a hot steaming bowl of oatmeal after. This oatmeal was topped with almond butter, craisins, and a bit of chocolate powder.


I also had an apple and a handful of goldfish as a mid morning snack.


Lunch was ham on hummus topped toast and my favorite beet and (laughing cow wedge) cheese salad. I just love the combo of flavors in the salad and it’s such a wonderful mix.



Mid afternoon I had a yogurt topped with granola.

Dinner was eaten pretty early before my exam and was roasted cauliflower, chicpeas and Trader Joe’s risotto left over from Sunday. Well balanced with a gingerbread man too!


Later that evening was a snack fest of a delicious ganache topped butterscotch bar, a almond butter microwaved banana and several more handfuls of goldfish. My banana was holiday-fied with some white chocolate chips sprinkled on top.

Once I started snacking, I just couldn’t stop.


Back to the books for me now…

WIAW:After Thanksgiving

Happy Wednesday!

I ate tons over the Thanksgiving holiday so knew I needed to scale it back and eat plenty of healthful foods this week.

My eats are from Monday as usual so here we go! (Side note: My computer is having uploading pictures at the moment so I have one recycled photo and no new ones-sorry!)

Breakfast was half an orange before yoga followed by some almond butter oatmeal after. This was so filling and a great way to get back on track.

Lunch was a hodge podge of foods but included carrots, celery with laughing cow cheese and a greek yogurt. I finished it off with some glazed walnuts.

My evening ended up being go-go-go between class and tutoring so dinner was a quick toasted turkey sandwich, apples, and mushrooms. I took a baggie of craisins to class with me to nosh on and followed class with a serving of Christmas goldfish!

I tried to balance good for you foods with plenty of benefits with some treats (like the goldfish and glaze on the walnuts) so I wasn’t depriving myself but also wanted to revive my appetite from all the sweets and carb I consumed this weekend.
