Scones for a long day

Somehow when I’m brain-dead and want to just crash on the couch, I always end up baking.

Last night I came back from my test foggy in the brain and starving. After I ate a can of peaches, I was still a little hungry so I whipped up a little batch of scones.

Scones are one of my favorite baked goods. Not too sweet and with so many options, you can never go wrong. It was the  perfect accompaniment to my tea in addition to flipping between Princess Diaries and Modern Family. Scones and t.v. and tea make a perfect recovery to a long evening.

I adapted this recipe by using chocolate soy milk and a dash of vanilla extract. This recipe was incredibly simple and delicious.

Chocolate Oat Scones

1/2 cup oats

1/2 tsp salt

1 tsp baking soda

2/3 cup flour

2 T butter

1/2 cup chocolate soy milk

1 tsp vanilla extract

Preheat oven to 475 degrees.

Mix together oats, salt, soda, and flour. Cut in butter. Add in milk and vanilla and stir until well combined.

Spoon onto a baking sheet and bake for 12 minutes.

Enjoy with a dab of butter!
